Cheesecake Supreme

CRUST
1 graham cracker pie crust*

FILLING
1 softened eight-ounce package cream cheese
1/2 cup sugar
1 tablespoon lemon juice
1/4 teaspoon vanilla
dash of salt
2 eggs

TOPPING
1 cup sour cream
2 tablespoons sugar
1/4 teaspoon vanilla

Preheat oven to 325 degrees

Combine cream cheese, sugar, lemon juice, vanilla, and salt until well blended.
Add eggs, one at a time, mixing well.
Place crust on baking sheet and pour in filling.
Bake for 25-30 minutes, or until knife inserted 1 inch from edge comes out clean.
Combine sour cream, sugar, and vanilla.
Spread carefully over hot filling.
Continue baking additional 10 minutes.
Cool. Chill.
If desired, top with fruit.

*Recipe was doubled for The Macintosh Cheesecake, and a gluten-free shortbread cookie-crumb crust in a 10" springform pan was substituted for the graham cracker pie crust. Rainbow was created with dustings of colored sugar.
