Crustless Quiche

12 oz. Swiss cheese, 1/4" cubes
5 eggs, lightly beaten
2/3 cup rice/soy drink
2/3 cup coconut milk (Thai Kitchen brand contains no sulfites)
1 clove garlic, crushed
1/2 cup onion, finely shredded
1/2 cup cooked broccoli cuts
1/4 teaspoon salt
freshly ground pepper to taste

Mix ingredients. Pour into ungreased glass 9" x 9" baking pan. Bake for 40 minutes at 325 degrees. Serve slightly warm.

[Note: 1 1/3 cups of cow's milk can be substituted for the rice/soy & coconut milk.]
